Asparagus and Chicken Salad
5 stalks asparagus, tough ends removed
2 leaves (about 60g) lettuce, torn into bite-size pieces
1 (about 180g) chicken breast
½ red onion, thinly sliced
salt and pepper
Kewpie Deep Roasted Sesame Dressing, Chuka Spicy Sesame Oil Dressing, or Wafu Savory Soy Dressing
1) In a pot, boil water and add a little salt. Cook asparagus for about 30 seconds. Drain and cut into 4 pieces. Set aside.
2) On microwave safe dish, place chicken and season lightly with salt and pepper. Cook in microwave on high for 2 to 3 minutes (cooking times vary depending on microwave oven wattage) until cooked through. Remove and cut into bite-size pieces once cool enough to handle.
3) In a serving plate, place lettuce, asparagus, onion and chicken. Serve with your choice of Kewpie Dressing.
