Katsu Sandwich with Creamy Sriracha Dressing
Ingredients: makes 2 sandwiches
4 slices bread
2 leaves lettuce
½ tomato, sliced
4 Tbsp. Kewpie Creamy Sriracha Dressing
1 chicken thigh cut in half
salt and pepper
½ egg, beaten in bowl with 2 Tbsp. water
2 Tbsp. flour
¼ c. panko
1) To prepare “katsu”, season chicken lightly with salt and pepper. Coat with flour, dip into egg/water mixture, then coat with panko. In frying pan, heat oil about 1 to 1.5 inches deep. Cook chicken about 3 minutes on each side. Set aside.
2) To make sandwich, place half of lettuce and tomato on first piece of bread. Pour 2 Tbsp. dressing over it, then add chicken katsu and second piece of bread. Repeat the process. Serve immediately.
